Sangria

Ingredients

3 1/2 cups dry red wine (about one bottle)
1/4 cup sugar
1 1/2 cups orange juice
1 cup lemon juice
1 orange, sliced crosswise
1 lemon, sliced crosswise
1 peach, pitted and cut into chunks
1 cup club soda

Directions

Combine all the ingredients except the club soda in a serving pitcher, mix well. Refrigerate overnight. Immediately before serving, mix in the club soda for added fizz. Serve over ice. Best served poolside on a hot summer day. Enjoy!

Chicken Tetrazzini

I've made this a couple of times and it always come out delicious. Parmesan asparagus is a perfect side dish. But as we learned on Maury, you have to be careful who you make it for. Video here

Ingredients

1 (8 ounce) package spaghetti, broken into pieces
1/4 cup butter
1/4 cup all-purpose flour
3/4 teaspoon salt
1/4 teaspoon ground black pepper
1 cup chicken broth
1 cup heavy cream
2 tablespoons sherry
1 (4.5 ounce) can sliced mushrooms, drained
2 cups chopped cooked chicken
1/2 cup grated Parmesan cheese

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish. Bring a large pot of lightly salted water to a boil. Add spaghetti, and cook for 8 to 10 minutes, or until al dente; drain.

Meanwhile, in a large saucepan, melt butter over low heat. Stir in flour, salt, and pepper. Cook, stirring, until smooth. Remove from heat, and gradually stir in chicken broth and cream.

Return to heat, and bring to a low boil for 1 minute, stirring constantly. Add sherry, then stir in cooked spaghetti, mushrooms, and chicken. Pour mixture into the prepared baking dish, and top with Parmesan cheese.

Bake 30 minutes in the preheated oven, until bubbly and lightly browned.

Baked Pork Chops with Parmesan-Sage Crust

Ingredients

1 1/2 cups Italian flavored breadcrumbs
1 cup freshly grated Parmesan cheese
1 tablespoon dried rubbed sage
1 teaspoon cumin
1 teaspoon grated lemon peel
2 large eggs
1/4 cup all-purpose flour
4 bone-in center-cut pork loin chops (each about 1 inch thick)
2 tablespoons (1/4 stick) butter
2 tablespoons olive oil

Directions

Heat oven to 425 degrees F.

Mix breadcrumbs, cheese, sage, cumin, and lemon peel in pie dish.

Whisk eggs in medium bowl to blend. Place flour on plate; season generously with salt and pepper. Coat pork chops on both sides with flour; shake off excess. Dip chops into eggs, then coat on both sides with breadcrumb mixture.

Melt butter with oil in heavy large ovenproof skillet over medium-high heat. Add pork chops to skillet and cook until golden brown, about 2 minutes per side. Transfer pork to a baking dish and put in oven. Bake until pork chops are crisp on the outside and meat thermometer inserted into pork registers 150 degrees F, about 20 minutes.

Makes 4 servings

Chicken with Herbed Goat Cheese

Ingredients

3 whole (6 split) chicken breasts, bone-in, skin-on
12 ounces Montrachet goat cheese, with garlic and herbs
Fresh basil leaves
Good olive oil
Kosher salt
Freshly ground black pepper

Directions

Preheat the oven to 375 degrees.

Place the chicken breasts on a baking sheet. Loosen the skin from the meat with your fingers, leaving one side attached. Cut 12 thick slices of the Montrachet and place 2 slices plus a large basil leaf under the skin of each chicken breast. Rub each piece with olive oil and sprinkle generously with salt and pepper. Bake the breasts for 35 to 40 minutes, until just cooked through. Serve hot or at room temperature.

Joey made this stew and it was delicious. Very meaty. It would be perfect for a cold winter night. And it freezes well too.

Ingredients

6 ounces sliced bacon
8 chicken legs, cut into 8 thighs and 8 drumsticks
2 pounds smoked Italian sausage, cut into 1-inch pieces
2 medium onions, chopped
2 medium garlic cloves, finely chopped
1 tablespoon tomato paste
1 (14.5-ounce) can diced tomatoes, drained
1 large sprig fresh thyme
1 bay leaf
1/4 teaspoon ground cloves
1 1/2 cups dry white wine
1 1/2 cups low-sodium chicken broth
3 (15-ounce) cans cannellini beans, drained
1/4 cup olive oil
2 cups coarse fresh breadcrumbs

Directions

Cook bacon in a large ovenproof pot over medium-high heat until browned and crisp, about 6 minutes. Using a slotted spoon, transfer bacon to a bowl.

Add half of the chicken to the pot, skin-side down, and cook until lightly browned, 3 to 4 minutes. Turn chicken pieces and brown on the other side, 3 to 4 minutes. Transfer chicken to a large platter, cook remaining chicken and set aside.

Return the pot to medium-heat. Add sausages and sauté until browned, 10 to 12 minutes. Transfer sausages to bowl with bacon. Pour off all but 1/4 cup drippings from pot.

Add chopped onions and sauté until soft and starting to turn translucent, 4 to 6 minutes. Stir in garlic, tomato paste, tomatoes, thyme, bay leaf and cloves.
Cook until fragrant, about 1 minute.

Add white wine and chicken broth and bring to a simmer, scraping any brown bits from the bottom of the pot, 1 to 2 minutes. Add chicken, submerge in liquid, and bring to a boil. Reduce heat to low, cover, and simmer for 30 to 40 minutes, until chicken is fully tender and cooked through.

Remove the cover from the pot and gently stir in bacon, sausage and drained beans. Remove and discard thyme sprig and bay leaf. Season with salt and pepper to taste.

Preheat oven to 400°F. Heat olive oil in a medium pan over medium heat. Add breadcrumbs and sauté until lightly golden, about 4 minutes. Season with salt and pepper. Sprinkle breadcrumbs evenly over the surface of the stew and bake, uncovered, until crumbs are golden brown, 10 to 12 minutes. Let rest for 10 to 20 minutes before serving.

If freezing stew, do not top with breadcrumbs. Thaw, top with breadcrumbs and bake until crumbs are browned and stew is thoroughly heated.

Serves 10 to 12

Pulled pork sandwich, cole slaw & beans

Pulled pork

Use your favorite rub and season a 5 lb. pork shoulder then cook in a slow-cooker for 8 hours on low. Take it out, let it cool and shred. Add BBQ sauce and put it all back in the crock pot on high for 30–45 minutes or until warm.

Cole slaw (the best I've ever had!)

1 (16 ounce) bag coleslaw mix
2 tablespoons diced onion
2/3 cup creamy salad dressing (such as Miracle Whip)
3 tablespoons vegetable oil
1/2 cup white sugar
1 tablespoon white vinegar
1/4 teaspoon salt
1/2 teaspoon poppy seeds

Combine the coleslaw mix and onion in a large bowl.
Whisk together the salad dressing, vegetable oil, sugar, vinegar, salt, and poppy seeds in a medium bowl; blend thoroughly. Pour dressing mixture over coleslaw mix and toss to coat. Chill at least 2 hours before serving.

Baked beans

I was lazy and used a can of Bush's Maple Cured Bacon baked beans and added diced onions. Heat slowly.

Fishes “Fishy” Bel Bruno mysteriously disappeared from his tank on Friday. He was four months old.

Fishy was last seen jovially swimming on Friday morning by Shane Eichacker. Later that night Carrie Garza, a Mexican, returned to the residence to find an empty tank.

Although the details of his disappearance are unclear, police have taken one suspect into custody, Dexter Elizabeth Garza.

Fishy is survived by Joe Bel Bruno.

Fourth of July with the Rabucks

I headed down to Palm Harbor, Florida to visit my friends Adam, Jea and their son Jonah for the long weekend. I had a blast swimming in their pool, visiting monkeys, and hanging out with Jonah.

Adam volunteers at the Suncoast Primate Sanctuary and I got a private tour! It was awesome.Adam gives the monkeys gum to buy their love.

Cheetah is a male chimp in his early 70's. He was one of the original "Cheetahs" from Johnny Weismuller's Tarzan movies. He has been at the sanctuary since the 1950s.

Blue, a Blackhanded Spider Monkey, was my favorite.

This is another Joey creation where he looks at a recipe and then throws it out and does what he wants. Just pile your favorite taco ingredients—taco beef, refried beans, cheese, salsa—on a pizza crust and bake. Then top with tomatoes, lettuce and sour cream. Muy delicioso!

Pickle recipe

I was reminded that I never posted this so here's the simple recipe I used with Kirby pickles, carrots and asparagus.

(Ingredients per quart container. Can be glass or plastic with a lid.)

Fill a quart container with:

1/4 tsp sugar
1 tbsp Kosher salt
2 dill heads and stems
1 large clove garlic
1 medium onion
handful of peppercorns
handful of mustard seeds

Then add your veggies (Pack them in tight)

Mix 9 oz of water with 5 oz of white vinegar and heat to almost a boil. Pour over the ingredients in the container. Leave out overnight then refrigerate for 10 days. Finish within one month.

These are delicious!

Ingredients

1 (8 ounce) package cream cheese, softened
1/2 cup mayonnaise
1 (.7 ounce) package dry Italian salad dressing mix
2 loaves French bread, cut into 1 inch slices
2 medium cucumbers, sliced
1 pinch dried dill weed

Directions

In a medium bowl, mix together the cream cheese, mayonnaise and Italian dressing mix. Refrigerate for at least 6 hours, or preferably overnight.
Spread the cream cheese blend onto slices of French bread. Top with a cucumber slice, and sprinkle with dill. You can make as many or few as you like. The cream cheese mixture keeps for about a week in the refrigerator.

What's more delicious than refreshing infused vodka? Nothin'! So we decided to make our own. We're trying cucumber, ginger and lemon. They're either going to be delicious or we've wasted three bottles of vodka. I'll let you know in 3-5 days.

UPDATE: The lemon was delicious. The cucumber tasted "weird." And the ginger tasted like dirt. (But we still drank every drop!)

Spinach and mushroom frittata

Best served with mimosas when you're hungover.

Ingredients

1 (10 ounce) package frozen chopped spinach, thawed and squeezed thoroughly to remove liquid
1 cup part-skim ricotta cheese
4 eggs or equivalent egg substitute
3/4 cup freshly grated Parmesan cheese
3/4 cup chopped portobello mushrooms
1/2 cup finely chopped scallions with some green tops
1/4 teaspoon dried Italian seasonings
1 pinch Salt and pepper, to taste
Extras: We also added some sliced potatoes, tomatoes and bacon bits

Directions

Preheat oven to 375 degrees.
In a large bowl, whisk together all ingredients until well mixed. Spray a 9-inch pie plate with cooking spray and fill with the spinach mixture.
Bake for 30 minutes, or until browned and set. Let cool for 20 minutes, cut in wedges and serve.

Salsa & sour cream chicken

Joey made this last night and it was delicious.

Ingredients

4 teaspoons olive oil
6 tablespoons sour cream
4 ounces shredded Cheddar cheese
2 cups fresh sliced mushrooms
1 (16 ounce) jar salsa
2 cups cooked white rice
8 ounces boneless chicken breast halves, cooked and diced

Directions
1. In a skillet, heat oil over medium heat. Saute mushrooms.
2. Combine mushrooms, sour cream, cheese, salsa, rice, and chicken. Place in a greased casserole dish.
3. Bake at 350 degrees F for 25 to 35 minutes.

Joey's 5-Minute Sauce

Go to the store and find canned San Marzano crushed tomatoes. Don't use the American stuff, its not as good. These are the real deal from Italy, and don't let canned fool you. Its as fresh as when the little old Italian man picked it from the vine. Used "crushed" — but, whole tomatoes is fine but make sure and crush it up yourself. Do not use puree.

1/4 cup olive oil
1 1/2 teaspoons crushed red pepper flakes
1/2 teaspoon fine grain sea salt
3 medium cloves of garlic, slice 'em thin and chop 'em up.
1 28-ounce can crushed red tomatoes

Throw your pan on the stove. Combine the olive oil, red pepper flakes, salt, and garlic in the cold saucepan. Then turn up the heat to about medium-high. Saute for about a minute, or until it starts to smell (not burn) really good. Don't let anything brown. Throw in the can of tomatoes and get the whole thing to a simmer. This probably takes a couple minutes. Give it a taste: Add what you think would be good, maybe some more salt? Also, don't be afraid to sub in some things – a few teaspoons of oregano, maybe some basil, authentic "fra diavlo" sauce with more red pepper, its all up to you. Just don't overdo it or it will mask the delicious taste of the tomatoes.

The search for a dirty suitcase

I bought this fabric in hopes of making a cat suitcase bed inspired by the one below. After a day at the 25th Street flea markets my search for the perfect beat-up suitcase came up dry. (On the other hand, if I would have been looking for Nazi memorabilia, I would have been in the right place!) The search continues! Next stop, Brooklyn flea.

Carne asada marinade

Here's a recipe for a delicious marinade. We used it to make tacos on Sunday.

Ingredients

1 Tbsp Olive Oil
1/2 cup tequila
1/2 cup lemon juice
1/2 cup lime juice
3 cloves garlic crushed
1 medium onion (finely diced)
1/2 tsp Paprika (optional)
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon paprika
Dash of hot sauce
pinch of salt

Directions
Combine all of the carne asada marinade ingredients together and mix well. Place the meat into a glass or ceramic flat-based bowl and pour the marinade over. Then cover.

Marinate meats for 2 to 3 hours, 6 max, turning a couple of times during that time to make sure you coat all of the meat.

TIP
You do not want to marinade with this recipe overnight, the citrus will start dissolving the Steak, or cooking your fish or chicken.

Oversized art, easy and cheap

I'm poor and I can't paint, so when I needed an over-sized piece of art for a frame I found I had to improvise. First, I grabbed an image from google image search and enlarged it free online at Block Posters. It automatically makes a PDF of your art tiled to any size you want. Then you can print the PDF to your home printer and cut-and-paste the tiles together. The final product was this frogman fighting a squid. Perfect for my bathroom and it cost zero dollars!

Best meatloaf EVER!

I found this recipe on allrecipes.com and altered it a little. It's delicious. I made it for Joey on his birthday and he loved it.

INGREDIENTS
• 1/2 cup packed brown sugar
• 1/2 cup ketchup
• 1 1/2 pounds lean ground beef (a little less is OK, but not more.)
• 3/4 cup milk
• 2 eggs
• 1 1/2 teaspoons salt
• 1/4 teaspoon ground black pepper
• 1 small onion, chopped
• 3/4 cup finely crushed saltine cracker crumbs
• 1/2 package Lipton onion soup mix

DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.
2. Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.

I've spent days trying to come up with a name for this blog and it seems the first 30 ideas I had are already taken, so I've resorted to my old standard. This may be confusing, especially since this blog will be posts of crafty stuff and will have nothing to do with being weary or gunfighters.
